{"id":9805,"date":"2014-10-28T17:02:24","date_gmt":"2014-10-29T00:02:24","guid":{"rendered":"http:\/\/sjcctimes.com\/?p=9805"},"modified":"2014-10-28T17:02:24","modified_gmt":"2014-10-29T00:02:24","slug":"enchiladas-homemade-sauce","status":"publish","type":"post","link":"https:\/\/sjcctimes.com\/es\/9805\/lifestyle\/enchiladas-homemade-sauce\/","title":{"rendered":"Enchiladas and  homemade sauce"},"content":{"rendered":"<p>[media-credit id=1 align=&#8221;alignleft&#8221; width=&#8221;550&#8243;]<a href=\"http:\/\/sjcctimes.com\/wp-content\/uploads\/\/2014\/10\/enchilada_illustration.png\"><img decoding=\"async\" src=\"http:\/\/sjcctimes.com\/wp-content\/uploads\/\/2014\/10\/enchilada_illustration.png\" alt=\"enchilada_illustration\" class=\"size-full wp-image-9806\" \/><\/a>[\/media-credit] <\/p>\n<p><strong>Recipe courtesy of Yaya Duran, San Jose, Calif.<\/strong><\/p>\n<p>2 pounds boneless chicken (can substitute with preferred meat or meatless)<br \/>\nCorn tortillas<br \/>\nShredded (Monterey Jack or Cheddar, preference)<br \/>\n\u00bc cup vegetable oil<br \/>\n\u00bc cup All-purpose flour<br \/>\n20 oz. can tomatoes crushed<br \/>\n2 tablespoon chili powder<br \/>\n1 \u00bd teaspoon dried oregano<br \/>\n1 teaspoon cumin<br \/>\n1 teaspoon garlic powder<br \/>\n1 teaspoon onion powder<br \/>\n1 tablespoon brown sugar (packed)<br \/>\nSalt &#038; black pepper (to taste)<br \/>\n(Optional dressings) Chopped Lettuce, tomatoes, sour cream<\/p>\n<p>Boil chicken in large pot, medium heat<\/p>\n<p>In separate saucepan, heat vegetable oil, medium-high heat.  Whisk All-purpose flour, into a creamy gravy texture, do not let ingredients dry out; remove from heat to prevent thickening so there are no lumps. (1 minute)<\/p>\n<p>Stir into pan crushed tomatoes, chili powder, dried oregano, cumin, garlic powder, onion powder and brown sugar, plus 1 cup of water (May substitute water with chicken, beef or vegetable broth, preference)<\/p>\n<p>Stir Salt and Black Pepper into pan, season to taste.  Bring to a boil, constantly whisking so it won\u2019t burn<br \/>\nReduce heat, simmer until lightly thickened (7-10 minutes)<\/p>\n<p>In small frying pan, medium-low heat; lightly fry corn tortillas in oil (10-15 tortillas) set aside<br \/>\nDip the fried tortillas, individually, into sauce.  Roll chicken (choice of meat), shredded cheese into tortilla, and place rolled enchilada in baking pan, with rolled end facing downward in pan.<br \/>\nRepeat step 8  until pan is filled, sprinkle shredded cheese onto enchiladas as a top layer<\/p>\n<p>Heat oven to 300-325 degrees, place pan into oven until cheese is melted (10-15 minutes)<br \/>\nServe with desired toppings;
